Philosophy
"Mangiar bene" is an all-Italian art made up of local flavors and the pleasure of being together at the table. A conviviality that characterizes us in the world.
To enhance the culinary culture of our country we rely on the talent of experienced chefs led by the starred Andrea Ribaldone, we choose only fresh ingredients, seasonal raw materials, giving a local and regional connotation to our dishes and reinterpreting tradition in a softly modern key.
The approach to the methods of preparation is always the same: simple and authentic, without infrastructure, to enhance the authenticity of the ingredients from breakfast to a la carte menus, from banquets to grab-n-go.

Chef Andrea Ribaldone, recognized by food and wine critics and with several Michelin stars won over the course of his long career, signs the menus of our restaurants and guides Quark's gastronomic line. His innovative ideas and his creative spirit blend well with our concept of dynamic, healthy and all Italian cuisine. His drive for innovation does not forget the most authentic roots, an approach in line with our style of hospitality.
